Easy Coconut Loaf

The recipe is very easy to follow, just prepare all your ingredients and add step by step. You don't need any special ingredients, this easy loaf is simply wonderful and packed with coconut. What you will need to make this easy coconut loaf:

125g butter
125g caster sugar
2 eggs
175g self-raising flour
4 tbsp desiccated coconut
2 tablespoons milk

Method

1. Preheat the oven to 180℃/gas mark 4 and line a 1lb loaf tin with parchment, set aside.

2. Using a medium sized mixing bowl cream the butter and sugar together until light and fluffy. This should only take a couple of minutes.

3. Then, beat in the eggs one at a time making sure to add a little of the flour with the second one for a creamier texture.

4. Sieve and fold in the remaining of the flour, three tablespoons of the desiccated coconut and milk.

5. Turn the mixture into the lined loaf tin and spread evenly with the back of a spoon or spatula. Bang the tin onto the side to remove air bubbles and sprinkle with the remaining coconut.

6. Bake in the preheated oven for about 40-50 minutes or until golden brown.

7. Lastly, combine a tablespoon of caster sugar and two tablespoons of milk. When the cake is done baking, take it out of the oven, and pierce several holes with a knife. Make sure than you get to the bottom of the loaf so that the glaze mixture can get to the bottom of the cake. Pour over the sugar and milk mix over the warm cake. Place on a wire rack to cool. Enjoy.
