A Quick & Easy Veggie Soup

Nothing warms you up quicker than sipping on a bowl of steaming hot soup on a bitter cold afternoon. Not only does soup keep you warm and toasty, it's also a fuss-free way to get a nutritious meal to your table quickly.


Homemade soup is wonderfully wholesome and the ultimate healthy meal choice. As long as you choose to add lots of veggies and go easy on salt and saturated fat of course. Soup is always a super filling option for meal times and most are low in calories which is great new for those who are on the slimming world plan. 

People who eat a soup before or as a main meal tend to ear less overall, so consuming some of your calories in the form of soup can keep hunger at bay and help you lose weight, without making you feel like you're depriving yourself. That's why we love soup in this household and we have the perfect veggie soup recipe for you that is super quick and easy to make. 

For this soup, we use onions, carrots and potatoes for the base of the soup. But it needs to be noted that the type of the potato can really make a difference in making this soup a hit or a miss. So for the particular soup recipe we prefer using a waxy potato instead of a floury variety, as they tend to change the consistency of the soup. But we also added some frozen peas and sweetcorn just before serving to give our soup a little extra bite. 

To make the quick and easy veggie soup you'll need:

1 medium onion, chopped finely
2 carrots, peeled and diced
250g of potato, peeled and chopped into cubes
800ml of chicken or vegetable stock
1 tbsp of thyme
a pinch of chilli flakes
2 tbsp of frozen peas
2 tbsp of frozen sweetcorn
salt and pepper to season
fresh chopped parsley
low calorie spray

1. Spray a deep set saucepan on a medium heat with some low calorie spray, add the chopped onion along with some salt and pepper to taste until soft. 

2. Then add the diced carrot, spray with some more low calorie spray adding a little bit of the stock to prevent any burning or sticking. 

3. Stir in the thyme, potatoes and stock made from two chicken or vegetable stock and then bring to a boil. Reduce heat and cover and simmer for approx 20-25 minutes.

4. It's at this stage that you want to add in the frozen veggies and cook for a further 10-15 minutes. 

5. If you wanted a thicker soup scoop out half of the soup and blitz in a blender. Once smooth add this to the remaining soup and cook for a further 5 minutes so the soup can fully thicken. If you don't have a blender or want to save time you could add a thickening agent but you would need to syn accordingly. 

6. Taste and season with salt and pepper as needed and sprinkle with fresh parsley. With this soup you can add whatever toppings you like such as chopped chicken, sausage, sauteed mushrooms or even extra chilli flakes if you like it spicy. This is a great soup to make if you're pushed for time but you can also add on whatever toppings you like.
