Grilled Chicken with Avocado Salsa

A grilled chicken breast recipe with a simple and delicious avocado salsa is one of my favourite go-to chicken recipes. This low carb chicken recipe is perfect summer dish and only takes 30 minutes to make. Great for families that don't want to spend too much time in the kitchen.

Salsa is easy enough to buy at the supermarket, and you can even buy versions that are fresh. But as with many things food-related, it often tastes much better if you make it yourself. Personally, there is no substitute for fresh chunky homemade salsa. A good homemade salsa pairs perfectly with this grilled chicken recipe, you won't have chicken any other way.


The chicken breasts are marinated in a citrusy garlic marinade and then grilled to perfection. But what I like about this particular salsa is that it can be easily adjusted to suit your taste. If you like it hot, then why not add some spicy jalapeƱos or for an extra crunch add some sweetcorn. The possibilities are endless when it comes to homemade chunky salsa.

What you'll need to make this Grilled Chicken with Avocado Salsa:

Grilled Chicken
4 whole chicken breasts
2 tbsp. coriander, chopped
1 tsp. garlic granules
½ tsp. cumin
½ tsp. paprika
½ tsp salt or to taste
2 tbsp. olive oil

Avocado Salsa
2 tomatoes, roughly chopped
1 avocado, diced
½ red onion, diced
¼ coriander, chopped
Salt and pepper
Lime juice

To begin, cut the breast to even thickness to get breasts and place in a bowl of sauce. Prepare the chicken by marinating it with lime juice, coriander, garlic granules, salt and olive oil until the chicken is well absorbed for at least 30 minutes.



While the chicken is marinating in the fridge, prepare the avocado salsa. Using a medium sized bowl, combine the chopped tomatoes, avocado, coriander and red onion together, squeeze one juice of a lime and mix through. Cover and keep in the fridge until you're ready to use.


Grill chicken over medium-high heat or in a large heavy-duty skillet on the hob for 5-6 minutes per side or until the inside is cooked through and the outside is charred. Then top with fresh avocado salsa and serve immediately. You can sever with any side dishes you like. You could pair this with Mexican rice, paprika chips or a green leafy salad.
