Courgette Slice

With a toddler, it can be hard to try and get them to eat new foods. But every week, when we are doing the weekly food shop we like to try new food with our little lady and this week we have chosen courgettes. So, after a little search on the internet there are so many ways we can enjoy them and this week we want to share our Courgette Slice Recipe. 

You will need:

2 Eggs 

64g of self-raising flour, sifted 

150g courgette, grated 

1/2 onion, chopped 

100g bacon 

40g cheddar cheese 

1-2 tbsp of olive oil 

1. Preheat the oven to 170c for fan assisted oven or gas mark 4. Grease and lie a baking dish with parchment. 

2. Beat the eggs in a small bowl until combined.

3. Add the flour and beat until smooth, add the courgette, onion, bacon, cheese and oil until combined. 

4. Pour into the prepared dish and bake for 30 minutes until cooked through.
