RECIPE | Turkey Koftas

We love all types of food, if I am honest there is not much that we don't like as a family. This month has seen a little change in our diet, we started to feel as if we became lazy and cooked what ever was the easiest. But thinking about it now, creating a delicious, good for you meal takes no time at all. All you need is a little preparation and that's exactly why I want to share this little recipe that my husband rustled up over the weekend. We all enjoyed them. What makes these turkey koftas even better is that a single portion of these are around 230 calories, and they go perfectly with a salad and potatoes.



What you'll need to create these tasty turkey koftas,

450g turkey mince
1 medium onion, peeled and chopped finely
2 tsp ground coriander
2 tsp ground cumin
2 tbsp. freshly chopped coriander
Salt and pepper
1-2 tbsp. olive oil
8 wooden kebab skewers (soaked in water for 30 minutes)

Serves: 4
Preparation time: 10 minutes
Cooking time: 10 minutes

1. Preheat the oven to 180°c/Gas mark 4 and line a baking tray with parchment. Place all the ingredients in a food processor and blend for 1-2 minutes. If you prefer to get your hands dirty you can kneed all the ingredients together.


2. Divide the mixture into eight the carefully mould around the wooden skewers, once they have been soaked for 30 minute in water and drained.


3. Brush the koftas with a little oil or low calories spray and play on the backing tray and cook in the pre-heated oven for 8-10 minutes, or until they are cook through. Turn occasionally during the cooking to ensure that are cooked on each side, brushing with a little oil if necessary. Serve with spinach and potatoes. These turkey koftas always work well with a cous cous, quiona or rice.
