BAKES | Broccoli and Cheese Muffins

Hello everyone,

Today I thought I’d share this simple savoury broccoli and cheese muffin recipe which is always a hit with Amelia, broccoli is one of her favourite vegetables.

These muffins are so easy and quick to make, great fun to do with the children and an alternative to what would normally be on the lunch menu. These muffins would be great for fingers foods and for any toddlers who may not like to eat their vegetables. :)
The easiest broccoli and cheese muffin recipe...

80oz of plain flour
5oz of cheese, grated
1-2 small florets of broccoli, finely chopped
6fl oz of semi-skimmed milk
3 tbsp of olive oil
3 tsp of baking powder
1 egg, beaten
a good pinch of salt and pepper

1. Preheat the oven to 180c and grease a 12 hole muffin tin. 

2. In a bowl mix together the flour, baking powder, finely chopped broccoli and cheese

3. Add the oil, beaten egg and mix well thoroughly
4. Spoon the mixture into a greased 12 hole muffin

5. Bake for around 30 minutes or until golden

    1. You can see the broccoli a little you could always say that they are herbs. Do you think you could get away with it? Lol Thank you for your comments x
